Zucchini pasta Alla’ Amatriciana

For sauce:
  • 2 garlic cloves
  • chili pepper to taste
  • 200 g Veres zucchini spread
  • 100 g bacon
  • 2 thyme branches
  • 30 g bulb onions
  • 3/2 tbsp. balsamic vinegar
  • 40 g grated parmesan
  • 3/2 tbsp. olive oil
  • 30 g parsley
  • salt, sugar to taste
For pasta:
  • 150 g pasta
  • salt to taste

For sauce: chop garlic, parsley, thyme, and cut bacon and onion into cubes. Heat the olive oil in a frying pan on little heat. Place bacon, onion into the frying pan and cook for 3-4 minutes. Add garlic and thyme, and cook for 30 seconds. Add Veres zucchini spread, balsamic vinegar, close by lid and stew for 5 minutes. Add salt, chili pepper, sugar and parsley.

For paste: put pasta in boiling salted water and cook Al dente. Drain water, mix ready paste and sauce. Strew with parmesan.
